I’ll admit that when I first heard of a mug cake from my mom about four years ago, I rolled my eyes. It sounded about as good as making lasagna in a slow cooker: soggy, lazy, and just not good. But my mind was changed by this very Coffee Cake Mug Cake. It’s sweet, a little savory, and – dare I say? – could be considered healthier with its substitutions of coconut oil and light use of sugar. Start Valentine’s Day off with a simple, yet delicious gesture for your sweetie with this Coffee Cake made in a mug! Make sure to bring them a tray with this cake, plus a steaming cup of Green Mountain Coffee® Breakfast Blend Coffee.
Coffee Cake in a Mug
¼ Cup Flour
½ Tsp. Baking Powder
¼ Tsp. Salt
2 Tbsp. Milk
1 Tbsp. Granulated Sugar
¼ Tsp. Vanilla Extract
1 Tsp. Coconut Oil (Vegetable Oil will work too!)
1 Tbsp. Brown Sugar
¼ Tsp. Ground Cinnamon
1. Lightly spray a microwavable mug with cooking spray and then mix together flour, baking powder, salt, milk, sugar, brown sugar, cinnamon and vanilla.
2. If desired, in step one, leave out the brown sugar and cinnamon, and add just after mixing the batter, swirl with the tip of a knife to spread throughout the mug.
3. Microwave on high for one minute and ten seconds.
4. Brew yourself 1 K-Cup® pod of Green Mountain Coffee® Breakfast Blend Coffee, sip, eat your cake, and enjoy!
