Mocha, Marshmallows, & A Little DIY

By Briana Keene

What’s Valentine’s Day without a few sweet treats and spreading the love to those around you? Kate from Domestikated Life is sharing some of her secrets to the perfect gift, for Valentine’s Day, or really any special time of year: all you need is some DIY from your heart and a little something sweet!

So, today, she has set up a Coffee Bar with her Keurig® K55 brewer while teaching us how to make HOMEMADE over-sized heart marshmallows. Yes, homemade marshmallows 🙂 We’re so excited to try these ourselves and we know they’ll be the perfect match with any of our K-Cup® pods, such as our Green Mountain Coffee® Toasted Marshmallow Mocha. Kate love this chocolate infused coffee bar for ‘a Galentine’s Day brunch, or to surprise your loved one on Valentine’s Day morning.’

She also used those cloud-like marshmallows in homemade gift baskets to create the perfect coffee date for those who you love!

Now, time to start making marshmallows…

Homemade Marshmallows

  • 3 packets of plain gelatin
  • 5 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • Confectioners’ sugar, for dusting

Combine gelatin with 1/2 cup of cold water and set aside.

Cook the granulated sugar, corn syrup, salt, and 1/2 cup water in a saucepan over medium heat until the sugar dissolves.

Raise the heat to high and cook until the syrup reaches 240 degrees – watch carefully to monitor the temperature and avoid burning.

One the syrup mixture reaches temperature, remove from heat and slowly pour the sugar syrup over the dissolved gelatin in the bowl of a stand mixer on low; add in the vanilla extract.

Turn the mixer up to high speed and whip until thick, for about 15 minutes.

Once thickened, pour the mixture out into an 8×12 baking dish that has been generously dusted with confectioners’ sugar.

Add more confectioners’ sugar over the smoothed out top, and set out to rest uncovered overnight.

After resting the marshmallows over night, turn them out onto a board and cut them in squares or press with cookie cutters into shapes.

Dust with more confectioners’ sugar before packaging with your favorite mugs and K-Cup® pods.

We know you’ll enjoy these – Happy Valentine’s Day!
