Lemonade Buttercream Frosting

I am the type of person who requests the corner piece of the cake to ensure that I get the max amount of cake plus frosting combination. If I were left to my own devices, I would probably turn my birthday cake into a jar of birthday frosting every year…ok, so you get my point…I love frosting! As summer is rolling in (thank goodness!), I dreamt up the idea of combining a very summery ingredient, like lemonade, into one of my favorite treats, frosting. So here it goes – lemonade buttercream frosting on yellow cupcakes. Sounds interesting, right? It was delicious. Here’s the recipe:

Frosting Ingredients:

1 ½ cups butter, softened

6 tablespoons Green Mountain Naturals®  Lemonade, brewed at 4 oz setting, cooled

2 teaspoons lemon zest, plus a little extra for garnish

1 tiny drop of lemon flavoring

5 cups powdered sugar

Directions:

In a standing mixer, beat the butter, add the lemonade, zest and lemon flavoring. Slowly add the powdered sugar, mixing between low and medium speeds until smooth and completely blended and smooth.

Cupcakes:

I ended up using a yellow cake mix out of a box, this worked fine! Make the cupcakes according to the directions on the box.  Let cool completely and then frost to your liking, garnish with the extra lemon zest!

It already feels like summer sunshine in here.
