Cinnamon Coffee Chocolate Chip Muffins

What you need:

  • 1¼ cups almond flour
  • ½ cup oat flour
  • ¼ cup tapioca flour
  • 1 tablespoon cinnamon
  • ½ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • ¼ cup semi sweet chocolate chips, plus extra for sprinkling on top
  • ¾ cup brewed coffee (Green Mountain Coffee® Sumatran Reserve brewed on the 8oz setting)

Directions:

Preheat oven to 325. Mix all ingredients in a standing mixer, adding the coffee last. Make sure the coffee is somewhat cooled, otherwise it will melt the chocolate chips.  Pour batter in a lined muffin tin, sprinkle desired amount of extra chocolate chips on top of batter.  Bake for approximately 25 minutes or until firm.
